Mondays Menu and Recipe`s

I said I would journal what we were eating so here is my day for you.
Breakfast
Ok here is where I struggle on a work day,
If I'm off work I have porridge oats made in the microwave with skimmed milk then top it with a banana and either strawberry’s or raspberry’s.
When at work I have a banana and a Nutragrain breakfast bar.
Lunch
Today I have vegetable soup with a bun (bread is a novelty) I only had quarter of the bun as the veg soup was a chunky veg and I didn’t really need the bun.
I also had a packet of snackajacks but never ate them so they are in my drawer for tomorrow.
Dinner
On a Monday we have a creamy chicken and mushroom pasta (sounds naughty)
We used to make this with a full fat creamy mushroom Campbell's condensed soup, we now have the low fat version,
1 large lean chicken fillet diced and dry fried,
Chop 6 large mushrooms add to the pan with crushed garlic (optional) when cooked add chopped spring onions. Add cooked pasta of your choice and then pour over the low fat soup, once everything is heated add mozzarella stir well and serve. We also have some garlic pizza with this it is just a small one for Asda and is cut into 6 pieces of which we have 2 each.
Snacks
If we get hungry later in the evening we would have a piece of fruit.
So today isn’t the most slimming but it is a healthier option to what we were having.

Tomorrows packed lunch
Pastryless Quiche
Take a large flan dish and line it with wafer thin ham, chop 1 large onion and cook in the microwave for 2 mins.

Slice 6 large mushroom then add both the onion and the mushrooms into the flan dish and spread out evenly on the base.

I use 2 measuring jugs (because they arn't big enough but you can use 1 if it is larger thean 1litre) and add 3 eggs into each and beat them, I then add 250g of Fat Free Cottage Cheese with Chives into each jug and mix it together with the eggs and add pepper to taste.

Pout this mixture into the flan dish covering the onions ad mushrooms, I then decorate with halved plum tomatoes and sprinkle 1 oz (28g) Low Low grated cheese on top.

Now bake in a preheated oven 190°C for 30mins. Until set and golden on top

This is a really large flan dish and the flan is cut into 4 it does 2 days lunches for both Chris and I.

ooh thank you. i used to make the pastryless quiche using corned beef on the bottom when i was on the slimming world diet.. must make it again

this recipe sounds delish. i have a question. why do you use 2 measuring jugs? do you combine the contents of both? does one have the cottage cheese and the other not? just a little confused. thanks

Oh my this looks so yummy, part of my problem is being to tired to cook, no not really, I honestly never acquired that cooking gene from my Mom, my brother got that one.

I do love to bake sweets and now tend to share more and more with our neighbors so no temptations will be in the home.

My hubby and son are really fussy eaters, but this looks like something they just might enjoy.

WAUW these things looks soo yummi JAk, and I think, I´ll give it a try too, even I´m one of those, who has troubles gaining weight, and has always beenn too slim, but this really looks good and just something I´ll just love to eat. Thanks so much for this great recipee.

Thanks sooo much for this recipee Jak, it really looks yummi, even I sure don´t need to loose weight, being on of the very few, who have a hard time gaining weight LOL. But this looks really tasty and just something I would love to eat.

it all sounds good.
I've got a question about the quiche aswell - ?? 6 eggs in total and also why cottage cheese and not skimmed milk ??
Oh also I used to eat porridge cooked in the pan but with water not milk . Only takes about 5mins in total . - I tend to splatter the microwave when I cook porridge in it.

Ummm, this looks tasty x

Slimming World is a good healthy diet. I like the fact you do not have to weigh a lot of stuff. Plenty of free foods.
